Description

This Hawaiian Pineapple Chicken Dinner is a vibrant and flavorful dish that combines juicy chicken with sweet pineapple and colorful vegetables, all roasted to perfection in a teriyaki-style glaze.

Ingredients

Boneless skinless chicken breasts

Fresh or canned pineapple chunks

Red and yellow bell peppers

Red onion wedges

Olive oil

Garlic

paprika

and chili flakes

Salt and black pepper

Low-sodium soy sauce

Pineapple juice

Honey or brown sugar

Rice vinegar or apple cider vinegar

Cornstarch and water

Instructions

  • Preheat your oven to 400°F (200°C).
  • In a large bowl, combine chicken pieces, pineapple chunks, bell peppers, red onion, olive oil, garlic, paprika, chili flakes, salt, and pepper. Toss well to coat.
  • In a small bowl, whisk together soy sauce, pineapple juice, honey (or brown sugar), vinegar, and cornstarch mixed in water, if using.
  • Pour the sauce over the chicken and veggies, tossing to coat evenly.
  • Spread the mixture evenly on a baking sheet lined with parchment paper.
  • Bake for 25-30 minutes, or until the chicken is cooked through and vegetables are tender, stirring halfway through.
  • Serve hot over rice or noodles, garnished with fresh herbs if desired.

Notes

For extra texture, consider broiling for the last few minutes to achieve a charred finish. Adjust the heat level by varying the amount of chili flakes.
