1 tbsp Lemon Zest
1/4 cup Fresh Lemon Juice
1 tsp Vanilla Extract
Instructions
- Preheat your oven to 350°F (175°C) and grease a loaf pan.
- In a bowl, combine flour, baking powder, baking soda, and salt.
- In another bowl, mix Greek yogurt, honey or maple syrup, melted coconut oil, eggs, lemon zest, lemon juice, and vanilla extract until smooth.
- Slowly add the dry ingredients to the wet ingredients, stirring until just combined.
- Pour the batter into the prepared loaf pan and spread evenly.
- Bake for 30-35 minutes or until a toothpick comes out clean.
- Allow to cool before slicing and serving.
