3/4 cup whole grain spelt flour

1/4 cup active sourdough discard

1/2 cup milk

1 cup all-purpose einkorn flour

1 large egg

5 tbsp unsalted butter

1 large egg yolk

1 tsp sea salt

6 oz softened cream cheese

1/4 tsp pure vanilla extract

1 to 2 tsp fresh lemon juice

1/4 cup white sugar

1 1/2 tsp all-purpose flour

a pinch salt

1 tbsp plus 1 tsp white sugar

1/2 tbsp unsalted butter

1 tbsp plus 1 tsp all-purpose flour


Instructions

  • In a large bowl, mix whole grain spelt flour, white sugar, and sea salt.
  • Add the sourdough discard, warmed milk, melted butter, egg, and egg yolk. Stir until combined.
  • Gradually add the all-purpose einkorn flour until a soft dough forms. If it’s sticky, incorporate more flour as needed.
  • Knead the dough gently on a floured surface for about 5 minutes. Place in a greased bowl, cover, and let rise for 1 hour.
  • While the dough rises, prepare the cream cheese filling by mixing softened cream cheese, vanilla extract, lemon juice, white sugar, flour, and salt until smooth.
  • Preheat the oven to 375°F (190°C). Once the dough has risen, punch it down and roll it out on a floured surface to about 1/4 inch thickness.
  • Cut dough into squares, place a spoonful of cream cheese filling in the center of each square, and pinch the corners together to form a pocket.
  • For the streusel topping, mix the sugar, flour, and chilled butter pieces until crumbly. Sprinkle over kolaches.
  • Arrange kolaches on a baking sheet and bake for 25-30 minutes or until golden brown. Let cool slightly before serving.

Notes

Feel free to experiment with different fillings, such as fruit preserves or nut butters. These kolaches also freeze well, making them perfect for meal prep!
