Healthy Sticky Chicken Bowls are a delicious and nutritious dinner option that brings together tender chicken, vibrant broccoli, and fluffy rice, all enveloped in a luscious sticky sauce that is effortlessly made.


Ingredients

2 cups uncooked rice

2 small heads broccoli chopped

3 large chicken breasts

2 tbsp olive oil

1 tsp salt

1/2 tsp pepper

1 tsp chili powder

1 tsp smoked paprika

1 tsp onion powder

1 tsp oregano

1/2 cup soy sauce

1/2 cup honey

1/4 cup rice vinegar

3 cloves garlic minced

2 tbsp sriracha

2 tsp sesame oil

1 tsp ground ginger

2 tsp arrowroot powder mixed with 2 tbsp water to make a slurry

1/2 cup mayo

1 tbsp sriracha

23 tbsp water

sesame seeds for topping


Instructions

  • Cook rice according to package instructions.
  • In a large skillet, heat olive oil over medium heat, then add chicken breasts, seasoning with salt, pepper, chili powder, smoked paprika, onion powder, and oregano.
  • Cook the chicken for 7-10 minutes on each side until fully cooked, then remove from skillet and let rest before slicing.
  • In the same skillet, add chopped broccoli and stir-fry for 3-4 minutes until tender-crisp.
  • In a bowl, whisk together soy sauce, honey, rice vinegar, garlic, sriracha, sesame oil, ground ginger, and the arrowroot slurry; pour this sauce into the skillet with broccoli.
  • Bring the sauce to a simmer and cook for 2-3 minutes until slightly thickened.
  • Slice the cooked chicken and add it back to the skillet, coating it in the sauce.
  • To serve, place cooked rice in bowls, top with chicken and broccoli, and drizzle with a mix of mayo and sriracha as a sauce, adding water to adjust consistency.
  • Garnish with sesame seeds before serving.

Notes

For a spicier kick, adjust the amount of sriracha in the sauce. You can use brown rice or quinoa as a healthier grain substitute.
