1 tablespoon granulated sugar

1 teaspoon vanilla extract

8 oz cream cheese

1 cup all-purpose flour (or gluten-free blend)

¾ cup Dutch-process cocoa powder

sifted

¼ teaspoon salt

¾ + 2 tbsp cup refined coconut oil or neutral oil

1 ½ cups granulated sugar

1 tablespoon vanilla extract

3 large eggs

room temperature


Instructions

  • Preheat your oven to 350°F (175°C) and prepare a heart-shaped baking dish with non-stick spray.
  • In a small saucepan, combine raspberries and 1 tablespoon sugar, heating over medium until raspberries break down. Stir in 1 teaspoon vanilla extract; set aside.
  • In a mixing bowl, beat cream cheese and ⅓ cup sugar until smooth. Add in 1 large egg and ½ teaspoon vanilla extract, mixing until well combined.
  • In another bowl, whisk together flour, cocoa powder, and salt. In a large bowl, mix ¾ cup coconut oil and 1 ½ cups sugar until well incorporated. Add the eggs one at a time, then mix in the dry ingredients.
  • Pour half of the brownie batter into the prepared dish. Dollop cream cheese mixture and raspberry swirl on top, then pour remaining brownie batter over.
  • Use a knife to swirl the raspberry mixture into the brownie batter.
  • Bake for 30 minutes or until a toothpick inserted comes out clean. Let it cool before cutting into heart shapes.

Notes

For a richer flavor, let the brownies sit for a day before serving. These brownies are best enjoyed fresh but can be stored in the refrigerator for up to three days.
