2 cups fresh spinach
chopped
1 cup artichoke hearts
drained and chopped
1 cup Greek yogurt
1 cup cottage cheese
1 cup shredded mozzarella cheese
½ cup grated Parmesan cheese
2 large eggs
2 cloves garlic
minced
1 teaspoon onion powder
1 teaspoon dried oregano
½ teaspoon salt
¼ teaspoon black pepper
Optional: red pepper flakes for heat
Instructions
- Preheat your oven to 350°F (175°C).
- In a large mixing bowl, combine chopped spinach, artichoke hearts, Greek yogurt, cottage cheese, shredded mozzarella, grated Parmesan, eggs, minced garlic, onion powder, oregano, salt, and pepper.
- Mix until well combined.
- Transfer the mixture into a greased baking dish.
- Sprinkle optional red pepper flakes on top if desired.
- Bake in the preheated oven for 30 minutes or until the top is golden brown.
- Let it cool for a few minutes, then slice and serve warm.
