This Hobo Casserole is a comforting one-dish meal combining flavorful ground beef, hearty potatoes, and colorful mixed vegetables, all baked in a creamy sauce and topped with melted cheese.
Ingredients
1 lb ground beef
1 medium onion
diced
2 cloves garlic
minced
4 medium potatoes
thinly sliced
2 cups mixed vegetables
1 can (10.5 oz) cream of mushroom soup
1 cup shredded cheese
1 teaspoon salt
1/2 teaspoon black pepper
1 teaspoon paprika (optional)
1 tablespoon olive oil
Instructions
- Preheat your oven to 375°F (190°C).
- In a skillet, heat olive oil over medium heat. Add diced onion and minced garlic; sauté until softened.
- Add the ground beef and cook until browned. Drain excess fat.
- In a large bowl, combine cooked beef mixture, thinly sliced potatoes, mixed vegetables, cream of mushroom soup, salt, pepper, and paprika. Stir until well combined.
- Spread mixture into a greased baking dish and sprinkle shredded cheese on top.
- Cover with foil and bake for 30 minutes, then remove foil and bake for an additional 10 minutes until cheese is bubbly and golden.
Notes
For a healthier version, you can substitute lean ground beef or turkey. Feel free to customize the mixed vegetables according to your preference.
