Ingredients
3 ⅓ cups (426 grams) all purpose flour
4 large eggs
¼ teaspoon salt
¼ cup olive oil
1 cup (240 grams) fresh ricotta
1 extra large egg
½ cup (50 grams) Parmesan cheese
freshly grated
2 tablespoons fresh spinach
½ teaspoon dried basil
½ teaspoon salt or to taste
⅛ teaspoon freshly ground black pepper
Small pinch of nutmeg
Instructions
- In a large bowl, combine the flour and salt. Make a well in the center and add the eggs and olive oil. Gradually mix until a dough forms.
- Knead the dough on a floured surface for about 10 minutes until smooth. Wrap in plastic wrap and let it rest for 30 minutes.
- For the filling, mix together the ricotta, egg, Parmesan, spinach, basil, salt, pepper, and nutmeg in a bowl until well combined.
- Roll out the pasta dough into thin sheets. Cut into squares and place a small spoonful of filling in the center of each square.
- Fold the pasta over to form triangles, sealing the edges tightly. Twist the ends to form tortellini shapes.
- Cook the tortellini in boiling salted water for about 3-4 minutes or until they float to the surface. Drain and serve with your favorite sauce.
