6 large egg yolks
1/2 cup granulated sugar
1 cup heavy whipping cream
2 cups milk
1/2 teaspoon ground nutmeg
pinch of salt
1/4 teaspoon vanilla extract

Instructions
- In a large bowl, whisk together the egg yolks and granulated sugar until the mixture is pale and fluffy.
- In a separate saucepan, heat the milk over medium heat until it’s just simmering, then remove from heat.
- Gradually add the hot milk to the egg yolk mixture, whisking constantly to temper the eggs.
- Return the mixture to the saucepan and cook over low heat until it thickens slightly, stirring constantly, about 5-10 minutes.
- Remove from heat and stir in the heavy whipping cream, ground nutmeg, salt, and vanilla extract.
- If desired, add alcohol to taste.
- Chill the eggnog in the refrigerator for at least an hour before serving.
- Serve chilled, topped with a sprinkle of ground cinnamon.
