Ingredients
2 cups granulated sugar (400 g)
2 tablespoons cornstarch
1 cup light corn syrup (240 ml)
¾ cup water (180 ml)
2 tablespoons unsalted butter (28 g)
1 teaspoon salt
1 teaspoon vanilla extract
1 teaspoon peppermint extract + a drop of green food coloring
1 teaspoon strawberry extract + a drop of red or pink food coloring
1 teaspoon lemon extract + a drop of yellow food coloring
1 teaspoon orange extract + a drop of orange food coloring
Optional Flavors: Root beer
coconut
or cotton candy extracts
Instructions
- In a large saucepan, combine the granulated sugar, cornstarch, corn syrup, and water. Stir until well mixed.
- Place the saucepan over medium heat and cook, stirring constantly, until the mixture reaches a boil.
- Add the unsalted butter, salt, and vanilla extract. Continue to cook without stirring until the mixture reaches the soft ball stage (around 240°F or 115°C).
- Remove from heat and let it cool for a few minutes. Then, add your chosen flavor extract and food coloring.
- Once it is cool enough to handle, grease your hands with butter and begin to knead the taffy, stretching and folding it until it becomes glossy and elastic.
- Shape the taffy into long ropes and cut into bite-sized pieces. Wrap in wax paper for storage.
Notes
Make sure to be cautious with hot sugar syrup. This recipe can be customized with various flavors and colors as desired.
