Honey Roasted Carrots are a deliciously sweet and savory side dish that pairs perfectly with any meal.
Ingredients

2 lbs. carrots peeled and cut into 2-inch chunks
2 tablespoons extra virgin olive oil
½ teaspoon kosher salt
¼ teaspoon fresh ground black pepper
3 tablespoons butter
3 tablespoons honey
⅛ teaspoon cayenne pepper
½ tablespoon fresh thyme or fresh parsley
Instructions
- Preheat your oven to 400°F (200°C).
- In a large bowl, toss the carrot chunks with olive oil, salt, and black pepper until well coated.
- Spread the carrots evenly on a baking sheet and roast for 25 minutes.
- In a small saucepan, melt butter over medium heat. Stir in honey and cayenne pepper, and cook until heated through.
- Remove the carrots from the oven, drizzle the honey mixture over them, and toss to coat.
- Return to the oven and roast for an additional 5 minutes.
- Garnish with fresh thyme or parsley before serving.
Notes
For a caramelized flavor, ensure to space out the carrots on the baking sheet. You may also use other herbs like rosemary for variation.
