These Irresistible Cranberry Orange Cookies are a delightful blend of tart cranberries and zesty orange, perfect for any occasion.
Ingredients
3 tbsp fresh orange juice
1 tbsp cornstarch
2 cups fresh cranberries (roughly chopped)
½ tsp baking soda
3 cups all-purpose flour (I use King Arthur)
1 tsp baking powder
1 tbsp orange zest (freshly grated for best flavor)
2 large egg yolks
1⅓ cups sugar
1 cup unsalted butter (softened to room temperature)
¾ tsp salt
2 tsp orange zest (freshly grated)
½ cup sugar
Instructions
- Preheat the oven to 350°F (175°C) and line a baking sheet with parchment paper.
- In a mixing bowl, cream together the softened butter and sugar until light and fluffy.
- Add the egg yolks, fresh orange juice, and orange zest to the butter mixture, and mix until well combined.
- In a separate bowl, whisk together the flour, cornstarch, baking powder, baking soda, and salt.
- Gradually add the dry ingredients to the wet mixture, stirring until just combined.
- Fold in the chopped cranberries gently until evenly distributed.
- Drop tablespoon-sized balls of cookie dough onto the prepared baking sheet, spacing them about 2 inches apart.
- In a small bowl, mix together the sugar and additional orange zest, and sprinkle this mixture on top of each cookie ball.
- Bake for 25-30 minutes or until the edges are lightly golden.
- Allow the cookies to cool on the baking sheet for a few minutes before transferring them to a wire rack to cool completely.
Notes
Feel free to substitute dried cranberries for a different texture or flavor. You can also add nuts for extra crunch!
