Ingredients
1 cup broccoli florets (fresh or frozen

1 cup sugar snap peas or green beans

1/4 cup low-sodium vegetable broth
2 tablespoons coconut aminos (or low-sodium soy sauce)
1 tablespoon lemon juice (fresh)
1 teaspoon maple syrup (optional)
1/2 teaspoon crushed red pepper flakes (optional)
Salt and black pepper to taste
2 tablespoons chopped fresh cilantro or parsley

Instructions
- In a large skillet or wok, heat a little water or vegetable broth over medium heat.
- Add the minced garlic and ginger, sautéing for about 30 seconds until fragrant.
- Add the sliced red onion and carrots, stir-frying for 3-4 minutes until softened.
- Next, add the broccoli, bell pepper, zucchini, and snap peas or green beans. Stir-fry for an additional 5-7 minutes until the vegetables are tender-crisp.
- Pour in the vegetable broth, coconut aminos, lemon juice, and optional maple syrup and red pepper flakes, mixing well to combine.
- Cook for another 2-3 minutes, allowing the sauce to slightly thicken. Season with salt and black pepper to taste.
- Remove from heat and garnish with fresh cilantro or parsley and sesame seeds if desired. Serve with lime wedges on the side.
