2 tablespoons chopped fresh cilantro or parsley

Sesame seeds (optional)

Lime wedges (for serving)


Instructions

  • In a large skillet or wok, heat a little water or vegetable broth over medium heat.
  • Add the minced garlic and ginger, sautéing for about 30 seconds until fragrant.
  • Add the sliced red onion and carrots, stir-frying for 3-4 minutes until softened.
  • Next, add the broccoli, bell pepper, zucchini, and snap peas or green beans. Stir-fry for an additional 5-7 minutes until the vegetables are tender-crisp.
  • Pour in the vegetable broth, coconut aminos, lemon juice, and optional maple syrup and red pepper flakes, mixing well to combine.
  • Cook for another 2-3 minutes, allowing the sauce to slightly thicken. Season with salt and black pepper to taste.
  • Remove from heat and garnish with fresh cilantro or parsley and sesame seeds if desired. Serve with lime wedges on the side.
