Instructions
- In a mixing bowl, blend powdered sugar and softened unsalted butter until smooth.
- Add peppermint extract and heavy cream to the mixture, adjusting peppermint to your taste. Mix until fully combined and creamy.
- Flatten the filling mixture onto a parchment-lined baking sheet to about half an inch thick and refrigerate for about 30 minutes.
- Once firm, cut the mixture into small rounds or desired shapes.
- Melt semi-sweet or dark chocolate in a double boiler. If desired, add a little vegetable oil for a smoother coating.
- Dip the chilled patties into the melted chocolate, coating them thoroughly, and place them back on the parchment.
