Ingredients
2 cups (400 g) granulated sugar
¾ cup (150 g) light brown sugar
packed
½ cup (115 g) unsalted butter
1 cup (240 ml) whole milk
¼ cup (60 ml) heavy cream
¼ teaspoon salt
2 cups (340 g) semisweet chocolate chips or chopped chocolate
½ cup (120 ml) marshmallow crème (or marshmallow fluff)
1 teaspoon pure vanilla extract
½ cup (60 g) chopped walnuts or pecans (optional)
sea salt flakes for topping (optional)
½ teaspoon espresso powder (optional)
Instructions
- In a large saucepan over medium heat, combine the granulated sugar, brown sugar, butter, whole milk, heavy cream, and salt. Stir continuously until the mixture comes to a boil.
- Once boiling, continue to stir for about 5 minutes until the mixture thickens slightly.
- Remove from heat and add the chocolate chips, marshmallow crème, and vanilla extract, stirring until fully melted and smooth.
- If desired, fold in the chopped nuts and espresso powder for enhanced flavor.
- Pour the fudge mixture into a greased or parchment-lined dish and spread evenly. Tap the dish gently to remove air bubbles.
- Sprinkle sea salt flakes on top if using, then let the fudge cool at room temperature until set, about 4 hours or overnight.
- Once set, cut into squares and serve.
Notes
Store leftover fudge in an airtight container at room temperature or in the refrigerator for up to two weeks. For a fun variation, try adding different flavors of extracts or colored sprinkles.
