Ingredients

Instructions
- Preheat your oven to 375°F (190°C).
- Pound the chicken breasts to a uniform thickness for even cooking.
- Season the chicken with salt and black pepper on both sides.
- In a skillet, heat olive oil over medium-high heat and sear the chicken until golden brown on both sides, about 4-5 minutes per side.
- Remove the chicken from the skillet and set aside.
- In the same skillet, add chopped jalapenos and peaches, cooking for 2-3 minutes until softened.
- Stir in honey and apple cider vinegar, then bring to a simmer.
- Mix cornstarch with water, then add to the skillet, stirring until the sauce thickens.
- Return the chicken to the skillet, coating it with the sauce and letting it cook for an additional 5-7 minutes.
- Serve hot, garnished with extra jalapenos if desired.
Notes
For milder heat, be sure to remove the seeds and membranes from the jalapenos. Fresh peaches are best when in season, but frozen can be a good alternative.
