750 g boneless skinless chicken thighs

1 fresh lemon juice

2 garlic cloves minced

1 tsp dried thyme

1 tsp rosemary

1 tsp salt

1/2 tsp cracked black pepper

2 tbsp olive oil

1 tbsp olive oil

250 g sliced fresh mushrooms

2 garlic cloves minced

1 tsp fresh parsley chopped

1 tsp dried thyme

1 tsp dried rosemary

1 cup heavy cream

1 tsp nutmeg

salt and black pepper

1/2 cup fresh parmesan cheese shredded


Instructions

  • Preheat your oven to 200°C (400°F).
  • In a bowl, combine chicken thighs with lemon juice, minced garlic, dried thyme, rosemary, salt, and cracked black pepper.
  • Heat 2 tablespoons of olive oil in a skillet over medium-high heat, and sear the chicken on both sides until golden brown.
  • Transfer the chicken to the oven and bake for 25-30 minutes, or until fully cooked.
  • While the chicken is baking, prepare the creamy mushroom sauce. In the same skillet, add 1 tablespoon of olive oil and sauté the sliced mushrooms until they are tender.
  • Add minced garlic and cook for another minute, then stir in fresh parsley, dried thyme, and dried rosemary.
  • Pour in the heavy cream and sprinkle in nutmeg, seasoning with salt and pepper to taste, and allow to simmer until it thickens.
  • Lastly, stir in the parmesan cheese until melted and well combined.
  • Serve the seared chicken thighs topped with the creamy mushroom sauce.

Notes

For added flavor, let the chicken marinate for an hour before cooking. You can also garnish with additional parmesan and parsley before serving.
