4 oz cream cheese
3 large eggs
1/4 cup butter
1/4 cup heavy cream
1 tbsp lemon zest
1 tsp vanilla extract
2 tbsp lemon juice
Instructions
- Preheat your oven to 350°F (175°C) and line a muffin tin with paper liners.
- In a mixing bowl, combine almond flour, coconut flour, baking powder, baking soda, salt, and powdered sweetener.
- In another bowl, beat the softened cream cheese until smooth.
- Add the eggs, melted butter, heavy cream, lemon zest, vanilla extract, and lemon juice to the cream cheese, and mix until well combined.
- Gradually fold the dry ingredients into the wet mixture until just blended.
- Spoon the batter into the prepared muffin cups, filling each about 2/3 full.
- Bake in the preheated oven for 25-30 minutes or until a toothpick comes out clean.
- Allow muffins to cool in the tin for 10 minutes, then transfer to a wire rack to cool completely.
