1 tbsp fresh lemon juice

2 x thin white fish fillets (120-150g / 4-5oz each)

2 tbsp oil (I use canola)

Lemon wedges

Finely chopped parsley

Instructions

  • In a small saucepan, melt the unsalted butter over low heat. Once melted, add the fresh lemon juice and stir to combine.
  • Season the lemon butter sauce with salt and finely ground pepper to taste. Keep warm while you prepare the fish.
  • Pat the fish fillets dry with paper towels. Season both sides with salt and pepper, then dredge lightly in white flour.
  • In a skillet, heat the canola oil over medium-high heat. When hot, add the fish fillets and cook for 3-4 minutes on each side, or until they are golden brown and cooked through.
  • To serve, place the crispy fish on plates, drizzle generously with the lemon butter sauce, and garnish with lemon wedges and finely chopped parsley, if desired.

Notes
