Ingredients
2 lamb shanks
approx. 1½ pounds each
½ cup olive oil
4 tablespoons butter
salt
ground black pepper
2 yellow onions
coarsely chopped
4 large carrots
coarsely chopped
4 stalks celery
coarsely chopped
8 garlic cloves
minced
2 cups red wine
1 (15 ounce) can canned crushed tomatoes
1 tablespoon tomato paste
2 cups beef stock
1 tablespoon lemon zest
3 tablespoons chopped fresh rosemary
1 tablespoon Fresh thyme
1 tablespoon lemon zest
Instructions
- Preheat the oven to 325°F (160°C).
- In a large Dutch oven, heat olive oil and butter over medium heat.
- Season the lamb shanks with salt and pepper, then brown them in the Dutch oven on all sides.
- Remove the lamb shanks and set them aside.
- Add the chopped onions, carrots, celery, and minced garlic to the pot and sauté until softened.
- Deglaze the pot with red wine, scraping up any browned bits from the bottom.
- Stir in the crushed tomatoes, tomato paste, beef stock, lemon zest, rosemary, and thyme.
- Return the lamb shanks to the pot, making sure they are submerged in the sauce.
- Cover and transfer to the preheated oven. Cook for 2 to 2.5 hours, or until lamb is tender.
- Serve hot, garnished with additional fresh herbs if desired.
Notes
For best results, marinate the lamb in the red wine and herbs overnight to enhance flavor.
