Ingredients

480g lean lamb leg steaks or backstrap sliced

2 tablespoons extra virgin olive oil

Juice of 1 lemon

20g Mingle Greek Garlic Seasoning

1 large red onion sliced

1 large red capsicum sliced

½ cup Greek yoghurt no added sugar

½ small Lebanese cucumber grated

½ clove garlic finely crushed

1 tbsp lemon juice

1 tbsp chopped fresh dill

Pinch salt

2 cups salad greens

1 cup cherry tomatoes halved

1 small cucumber diced

½ small red onion finely sliced

2 tablespoons kalamata olives rinsed

20g Feta reduced fat

1 tablespoon olive oil

1 tablespoon balsamic vinegar


Instructions

  • In a bowl, combine the olive oil, lemon juice, Greek Garlic Seasoning, and sliced lamb. Marinate for at least 30 minutes.
  • Thread the marinated lamb onto skewers and grill over medium heat for about 15-20 minutes, turning until cooked to your preference.
  • In a separate bowl, mix together all the tzatziki ingredients until well combined. Adjust seasoning with salt if necessary.
  • For the salad, combine salad greens, cherry tomatoes, diced cucumber, sliced red onion, kalamata olives, and feta in a large bowl.
  • Drizzle olive oil and balsamic vinegar over the salad, gently toss to combine.
  • Serve the grilled lamb souvlaki with Greek salad and a side of tzatziki.

Feel free to adjust the seasoning and vegetables in the salad according to your taste. For added flavor, let the lamb marinate overnight.
