Instructions

  • Preheat your oven to 350°F (175°C) and grease a 9×9 inch baking pan.
  • In a mixing bowl, combine melted unsalted butter and granulated sugar, mixing well.
  • Add large eggs and vanilla extract, beating until smooth.
  • In another bowl, whisk together unsweetened cocoa powder, all-purpose flour, salt, and baking powder.
  • Gradually add the dry ingredients to the wet mixture until well combined.
  • Pour the brownie batter into the prepared pan and bake for 25-30 minutes or until a toothpick comes out clean.
  • While the brownies cool, prepare the chocolate mousse by whipping the chilled heavy cream until soft peaks form.
  • In a saucepan over low heat, melt the finely chopped semisweet chocolate and milk, stirring until smooth.
  • Fold the melted chocolate mixture into the whipped cream along with powdered sugar, being careful not to deflate the cream.
  • Spread the chocolate mousse over the cooled brownie base and refrigerate for at least 2 hours.
  • For the ganache topping, heat the heavy cream in a saucepan until just boiling, then pour over the remaining finely chopped semisweet chocolate.
  • Allow it to sit for a minute, then stir until smooth and pour over the set mousse layer.
  • Return to the refrigerator for another hour to set before slicing into squares and serving.
