⅓ cup melted butter
2 large eggs
3 tablespoons lemon juice
1 ½ cups all-purpose flour
1 teaspoon baking powder
1 teaspoon salt
½ cup milk
1 cup fresh or frozen blueberries
½ cup chopped walnuts
2 tablespoons grated lemon zest
For the glaze topping:
1 cup powdered sugar
2 tablespoons lemon juice
Instructions
Preheat your oven to 350°F (175°C) and grease a loaf pan.
In a large bowl, mix 1 cup white sugar and ⅓ cup melted butter until creamy.
Add 2 large eggs and 3 tablespoons lemon juice, mixing well.
In another bowl, whisk together 1 ½ cups flour, 1 teaspoon baking powder, and 1 teaspoon salt.
Gradually add the dry ingredients into the wet mixture, alternating with ½ cup milk.
Gently fold in the 1 cup blueberries, ½ cup walnuts, and 2 tablespoons grated lemon zest.
Pour the batter into the prepared loaf pan and bake for about 60 minutes, or until a toothpick inserted in the center comes out clean.
For the glaze, mix 1 cup powdered sugar with 2 tablespoons lemon juice and drizzle over the cooled bread.
Notes
If using frozen blueberries, toss them in flour before folding them into the batter to prevent them from sinking.
For an even texture, use room temperature ingredients and avoid overmixing the batter.
