This Lemon Blueberry Tart features a delightful shortbread crust, a creamy lemon filling, and a luscious blueberry sauce, perfect for any dessert lover.
Ingredients
1 teaspoon cornstarch
2 teaspoons lemon juice
1 cup fresh or frozen blueberries
2 teaspoons granulated sugar
1/2 cup unsalted butter
melted
1/4 cup granulated sugar
1 teaspoon pure vanilla extract
1/4 teaspoon salt
1 cup all-purpose flour
1 can full-fat sweetened condensed milk
6 tablespoons lemon juice
1 teaspoon lemon zest
1 large egg yolk
lemon slices
blueberries
leftover blueberry sauce
whipped cream
Instructions
- Preheat the oven to 350°F (175°C).
- In a saucepan, combine blueberries, granulated sugar, cornstarch, and lemon juice over medium heat until bubbly. Cook for about 5 minutes then set aside.
- To make the crust, in a mixing bowl, combine melted butter, sugar, vanilla extract, and salt. Stir in flour until crumbly. Press the mixture into the bottom of a tart pan evenly.
- Bake the crust for 15-20 minutes or until lightly golden. Remove from the oven and let cool.
- In a separate bowl, whisk together sweetened condensed milk, lemon juice, lemon zest, and egg yolk until smooth. Pour the filling into the cooled crust.
- Bake the tart for an additional 15 minutes. Allow it to cool completely before topping with blueberry sauce.
- Serve garnished with lemon slices, additional blueberries, whipped cream, or extra blueberry sauce as desired.

For best results, use fresh lemons for zest and juice to enhance flavor.
