Instructions
- Preheat your oven to 350°F (175°C) and grease two 9-inch round cake pans.
- In a large bowl, cream together the softened unsalted butter and granulated sugar until light and fluffy.
- Add in the large eggs one at a time, mixing well after each addition.
- Sift together the all-purpose flour, baking powder, and salt in a separate bowl.
- Gradually add the dry ingredients to the wet mixture, alternating with the whole milk, starting and ending with the dry ingredients.
- Mix in the fresh lemon juice, lemon zest, and pure vanilla extract until just combined.
- Divide the batter evenly between the prepared pans and smooth the tops.
- Bake for 25-30 minutes or until a toothpick inserted in the center comes out clean.
- Let the cakes cool in the pans for 10 minutes before transferring to a wire rack to cool completely.
- For the filling, whip the heavy whipping cream until stiff peaks form. In another bowl, mix the softened cream cheese and powdered sugar until smooth, then fold in the whipped cream and lemon curd if using.
- Once the cakes are cool, place one layer on a serving platter, spread the filling on top, then place the second cake layer on top.
- Pipe whipped cream on top, and garnish with powdered sugar, lemon zest, or mint leaves as desired.
Notes
For an extra lemony flavor, you can add more lemon curd to the filling. Ensure your cream cheese is fully softened for smooth mixing.
