Ingredients

4 cups whole milk
1 cup granulated sugar
1/2 teaspoon salt
6 large egg yolks
2 tablespoons cornstarch
Zest of 2 large lemons
1/3 cup fresh lemon juice
1 cup powdered sugar
1–2 tablespoons fresh lemon juice for glaze
Instructions
- In a large saucepan, combine the whole milk, 3/4 cup of granulated sugar, and salt over medium heat. Stir until the sugar dissolves and the mixture is warm but not boiling.
- In a separate bowl, whisk together the egg yolks and remaining 1/4 cup of sugar until pale and slightly thickened. If using, whisk in cornstarch until well combined.
- Gradually add a small amount of the warm milk mixture to the egg yolk mixture, whisking constantly to temper the eggs. Once combined, return the mixture to the saucepan.
- Cook over medium heat, stirring constantly, until the custard thickens and coats the back of a spoon, about 10 minutes. Do not let it boil.
- Remove from heat and stir in the lemon zest and lemon juice. Pour the custard into a bowl and cover with plastic wrap, pressing it directly onto the surface to prevent a skin.
- Let it cool to room temperature, then refrigerate for at least 2 hours or until chilled.
- For the glaze, whisk together the powdered sugar and lemon juice until smooth. Drizzle over the custard before serving.
Notes
For a thicker custard, the optional cornstarch can be added. Always use fresh lemon juice for the best flavor, avoiding bottled alternatives.
