Ingredients

2 cups cauliflower florets
2 cups Brussels sprouts
halved
2 cups pumpkin
chopped
1 large red onion
cut into wedges
2 tablespoons olive oil
2 cloves garlic
crushed
Zest of 1 lemon
Fresh thyme
Salt and black pepper to taste
Instructions
- Preheat your oven to 400°F (200°C).
- In a large bowl, combine the chicken thighs, cauliflower florets, Brussels sprouts, pumpkin, red onion, olive oil, crushed garlic, lemon zest, thyme, salt, and black pepper. Toss everything together until well coated.
- Spread the chicken and vegetables evenly on a baking sheet.
