Instructions

  • Preheat your oven to 350°F (175°C) and line a cupcake tin with paper liners.
  • In a bowl, whisk together the flour, baking powder, and salt, then set aside.
  • In a separate bowl, cream the unsalted butter and granulated sugar until light and fluffy.
  • Add the eggs one at a time, followed by the vanilla extract, lemon zest, and lemon juice, mixing until well combined.
  • Gradually add the dry ingredients to the wet ingredients, alternating with the whole milk, and mix until just combined.
  • Gently fold in the crushed dried lavender.
  • Divide the batter evenly among the cupcake liners and bake for 18-20 minutes, or until a toothpick inserted in the center comes out clean.
