Ingredients
1 package (7 oz) ladyfingers (savoiardi)
16 oz mascarpone cheese
1 1/2 cups heavy cream
3/4 cup powdered sugar
Zest of 2 lemons
1/2 cup limoncello
1/4 cup fresh lemon juice
1/2 cup water
1 teaspoon vanilla extract
Pinch of salt
Instructions
- In a medium bowl, combine the mascarpone cheese, powdered sugar, lemon zest, limoncello, lemon juice, vanilla extract, and a pinch of salt. Mix until smooth.
- In a separate large bowl, whip the heavy cream until stiff peaks form.
- Gently fold the whipped cream into the mascarpone mixture until fully combined.
- In a shallow dish, mix the water and remaining limoncello. Quickly dip each ladyfinger in the mixture, making sure not to soak them.
- Layer half of the dipped ladyfingers in the bottom of a serving dish. Spread half of the mascarpone mixture over the ladyfingers.
- Repeat with the remaining ladyfingers and mascarpone mixture.
- Cover and refrigerate for at least 4 hours, or overnight for best results.
- Serve chilled, garnished with additional lemon zest if desired.
Notes
For a more intense lemon flavor, you can add more lemon zest or adjust the limoncello to your taste. This dessert can be made a day in advance for better flavor.
