4 egg whites

Instructions

  • In a saucepan, whisk together 1 cup white sugar, 2 tablespoons flour, 3 tablespoons cornstarch, and ¼ teaspoon salt. Gradually stir in 1 ½ cups water.
  • Cook over medium heat, stirring constantly, until the mixture thickens and comes to a boil.
  • Remove from heat and mix in 2 tablespoons butter, the lemon juice, and lemon zest.
  • Whisk a small amount of the hot filling into the 4 beaten egg yolks, then return to the saucepan and cook for 2 more minutes.
  • Pour the filling into the baked pie crust.
  • In a clean bowl, beat the 4 egg whites until soft peaks form, then gradually add ½ cup white sugar until stiff peaks form.
  • Spread the meringue over the lemon filling, sealing the edges to the crust.
  • Bake in a preheated oven at 350°F (175°C) for about 10-15 minutes or until the meringue is golden brown.
  • Cool before serving.
