Lemon Raspberry Madeleines are delightful little French pastries, bursting with the tangy flavor of lemon and the sweetness of fresh raspberries, making them the perfect treat for any occasion.
Ingredients
1 cup (120g) all-purpose flour
1/2 teaspoon baking soda
Salt
1/4 cup
2 large eggs
1 cup (100g) Sugar granulated
1 teaspoon vanilla extract
1 tablespoon lemon zest
2 tablespoons of fresh lemon juice
Half half cup (113g) non-salted butter softened and slightly chilled
1/3 Cup fresh raspberries Finely chopped
For Finishing: Sugar powder
suitable to dust
Instructions
- Preheat your oven to 375°F (190°C) and grease the madeleine pan with butter.
- In a small bowl, whisk together the flour, baking soda, and a pinch of salt.
- In a mixing bowl, beat the eggs and granulated sugar until pale and fluffy.
- Add the vanilla extract, lemon zest, and lemon juice, mixing well.
- Gently fold the dry ingredients into the wet mixture, followed by the softened butter, until smooth.
- Fold in the finely chopped raspberries.
- Spoon the batter into the madeleine cavities, filling them about 2/3 full.
- Bake for about 10-12 minutes, or until they are golden brown and spring back when lightly touched.
- Allow them to cool slightly, then remove from the pan and dust with powdered sugar before serving.
Notes
For best results, use fresh raspberries and let the batter rest in the fridge for 30 minutes before baking.
