2 tbsp butter (or additional coconut butter)
3 tbsp powdered sugar (or erythritol)
zest of one lemon
3 oz white chocolate chips (optional)
1 drop natural food coloring (or pinch turmeric (optional for color))
Instructions
- In a mixing bowl, combine cream cheese, butter, powdered sugar, and lemon zest until smooth and creamy.
- Chill the mixture in the refrigerator for about 30 minutes or until firm.
- Once firm, scoop out small portions and roll them into balls.
- If using, melt the white chocolate chips and add food coloring to achieve desired color.
- Dip the truffles in the melted chocolate and place them on parchment paper to set.
Notes
For a healthier alternative, you can substitute sugar with erythritol and use coconut butter instead of cream cheese.
