1 cup (226g) Unsalted Butter

softened

1 ½ cups (300g) Granulated Sugar

3 large Eggs

room temperature

1 teaspoon Vanilla Extract

Zest of 2 large Lemons

½ cup (120ml) Buttermilk

room temperature

½ cup (120ml) Limoncello

1 ½ cups (180g) Powdered Sugar

sifted

¼ cup (60ml) Limoncello

1 tablespoon fresh Lemon Juice


Instructions

  • Preheat the oven to 350°F (175°C) and grease a cake pan.
  • In a bowl, whisk together the flour, baking powder, baking soda, and salt.
  • In a large mixing bowl, cream the softened butter and granulated sugar until light and fluffy.
  • Add the eggs one at a time, beating well after each addition. Stir in the vanilla extract and lemon zest.
  • Add the dry ingredients to the wet mixture alternately with the buttermilk and Limoncello, starting and ending with the dry ingredients. Mix until just combined.
  • Pour the batter into the prepared cake pan and smooth the top.
  • Bake in the preheated oven for 25-30 minutes or until a toothpick inserted into the center comes out clean.
  • Let the cake cool completely before making the glaze.
  • For the glaze, whisk together the powdered sugar, Limoncello, and lemon juice until smooth.
  • Drizzle the glaze over the cooled cake and allow it to set before serving.

Notes

For a stronger Limoncello flavor, feel free to add more Limoncello to the glaze or the batter. This dessert pairs wonderfully with fresh berries.
