Description

This Loaded Veggie White Lasagna is a delicious and satisfying dish packed with fresh vegetables and creamy cheeses, perfect for a hearty meal.


Ingredients

Lasagna noodles – 9 sheets (no-boil or regular)

Ricotta cheese – 2 cups

Shredded mozzarella cheese – 3 cups

Parmesan cheese – 1/2 cup

Fresh spinach – 4 cups (or 1 cup cooked and drained if using frozen)

Zucchini – 1 medium

thinly sliced

Mushrooms – 1 cup

sliced (button or cremini)

Garlic – 3 cloves

minced

Onion – 1 medium

finely chopped

Olive oil – 2 tablespoons

Salt – to taste

Pepper – to taste

Italian seasoning – 1 teaspoon (optional)


Instructions

  • Preheat your oven to 375°F (190°C).
  • In a large skillet, heat the olive oil over medium heat, then add the onion and garlic. Sauté until the onion is translucent.
  • Add the sliced zucchini and mushrooms to the skillet, cooking until they are tender. Stir in the spinach until just wilted. Season with salt, pepper, and Italian seasoning.
  • In a baking dish, spread a thin layer of marinara sauce (optional) on the bottom. Place three lasagna noodles on top.
  • Spread half of the ricotta cheese mixture over the noodles, followed by half of the veggie mixture, and a sprinkle of mozzarella cheese. Repeat the layers, finishing with a layer of noodles, topped with remaining mozzarella and Parmesan cheese.
  • Cover the dish with aluminum foil and bake for 25 minutes. Remove the foil and bake for an additional 10 minutes or until the cheese is bubbly and golden.
  • Let the lasagna cool for a few minutes before slicing. Serve warm.
