Indulge in this creamy and decadent Lush Vanilla Berry Pudding, layered with fresh berries and a hint of vanilla, perfect for any dessert lover.
Ingredients
2 large egg yolks
½ cup (100 g) sugar
⅓ cup (37 g) cornstarch
2¼ cups whole milk

2 tsp. Diamond Crystal or 1 tsp. Morton kosher salt
divided
½ cup (1 stick) unsalted butter
cut into 1” pieces
room temperature
1 Tbsp. vanilla bean paste or extract
2 cups chilled heavy cream
⅓ cup strawberry or other berry jam
18 oz. mixed fresh berries (such as raspberries
blackberries
and/or blueberries)
halved if large
½ 11-oz. box Nilla Wafers
Instructions
- In a medium bowl, whisk together the egg yolks, sugar, and cornstarch until smooth.
- In a saucepan, heat 2 cups of whole milk with salt over medium heat until just simmering.
- Gradually whisk the hot milk into the egg mixture to temper the yolks, then return the mixture to the saucepan.
- Cook over medium heat, stirring constantly, until the mixture thickens and bubbles. Remove from heat.
- Stir in the butter and vanilla bean paste until fully melted and combined. Let cool slightly.
- In a separate bowl, whip the heavy cream until stiff peaks form. Gently fold the whipped cream into the cooled pudding mixture until combined.
- In a serving dish, layer Nilla Wafers, then the pudding, followed by a layer of berries and jam. Repeat the layers until the dish is filled.
- Refrigerate for at least 2 hours before serving to set the layers.
Notes
For extra flavor, you can add a splash of lemon juice to the berries before layering.
