This Macro Friendly Cajun Chicken Pasta is a delicious and healthy twist on a classic dish, packed with flavor and perfect for meal prep.
Ingredients
1 pound (450g) boneless
skinless chicken breast
cut into bite-sized pieces
2 tablespoons cajun seasoning
1 tablespoon olive oil
8 ounces (225g) whole wheat or gluten-free pasta
1 red bell pepper
sliced
1 green bell pepper
sliced
1 small onion
sliced
3 cloves garlic
minced
1 cup (240ml) low-sodium chicken broth
1/2 cup (120ml) unsweetened almond milk or any milk of choice
1/4 cup (60g) low-fat cream cheese
1/4 cup (30g) grated parmesan cheese
Salt and black pepper to taste
Fresh parsley
chopped
for garnish
Lemon wedges
for serving
Instructions
- In a large skillet, heat the olive oil over medium heat.
- Add the chicken pieces and sprinkle with cajun seasoning. Cook until browned and cooked through, about 5-7 minutes.
- Remove the chicken from the skillet and set aside.
- In the same skillet, add the sliced onion, red bell pepper, and green bell pepper. Sauté for about 5 minutes until softened.
- Add the minced garlic and cook for an additional minute.
- Stir in the chicken broth, almond milk, cream cheese, and parmesan cheese. Mix until smooth and let simmer for 3-5 minutes.
- Meanwhile, cook the pasta according to package instructions. Drain and add to the sauce in the skillet.
- Return the cooked chicken to the skillet and toss everything together until well combined. Adjust salt and pepper to taste.
- Serve garnished with fresh parsley and lemon wedges.
Notes
This dish can be made gluten-free by using gluten-free pasta. Feel free to adjust the spiciness of the cajun seasoning to your taste.
