8 yellow summer squash
thinly sliced
1 small yellow onion
thinly sliced
1 large egg
lightly beaten
1 cup low-fat sour cream
1 sleeve buttery round crackers (such as Ritz®)
crushed

2 cups shredded sharp Cheddar cheese
divided
Instructions
- Preheat your oven to 350°F (175°C).
- In a large bowl, mix the thinly sliced squash and onion.
- Add the beaten egg, sour cream, 1 cup of Cheddar cheese, and half of the crushed crackers to the squash mixture and stir until well combined.
- Transfer the mixture to a greased baking dish and spread evenly.
- Top with the remaining Cheddar cheese and crushed crackers.
- Bake in the preheated oven for 30 minutes or until golden and bubbly.
- Let it cool for a few minutes before serving.
Notes
