Sweet Potatoes

Instructions
- Preheat your oven to 425°F (220°C) and line a baking sheet with parchment paper.
- Peel and cube the sweet potatoes, then toss them with olive oil and garlic powder, spreading them on the baking sheet.
- In a bowl, mix maple syrup and Dijon mustard. Coat the chicken breasts in this marinade and place them on another baking dish.
- Put both the sweet potatoes and chicken in the oven. Roast the sweet potatoes for 25-30 minutes until tender and golden, and bake the chicken for about 20-25 minutes until cooked through.
- While everything is baking, prepare quinoa or brown rice as per package instructions.
- Once cooked, assemble the bowls by placing a base of quinoa or rice, topped with roasted sweet potatoes and slices of maple Dijon chicken. Garnish with fresh herbs.
Notes
For a different flavor, substitute chicken thighs for the breasts, and try using butternut squash in place of sweet potatoes. This dish is great for meal prep and can be easily stored in airtight containers.
