Ingredients
4 salmon fillets (about 6 oz each)
1/4 cup pure maple syrup
2 tablespoons soy sauce (or tamari for gluten-free)
1 tablespoon Dijon mustard
1 tablespoon olive oil
1 clove garlic (minced)
Salt and pepper (to taste)
2 cups carrots (peeled and cut into sticks)
2 cups parsnips (peeled and cut into sticks)
1 cup sweet potatoes (peeled and cubed)
2 tablespoons olive oil
1 teaspoon dried thyme (or fresh thyme)
Salt and pepper (to taste)
Instructions
- Preheat your oven to 400 degrees F (200 degrees C).
- In a small bowl, whisk together the maple syrup, soy sauce, Dijon mustard, olive oil, minced garlic, salt, and pepper.
- Place the salmon fillets in a baking dish and pour half of the maple glaze over the top, reserving the other half for later.
- In another bowl, toss the carrots, parsnips, and sweet potatoes with olive oil, thyme, salt, and pepper.
- Spread the root vegetables on a baking sheet and place in the oven.
- After 15 minutes, add the salmon to the oven and cook for an additional 15 minutes, or until the salmon flakes easily with a fork.
- Remove the salmon and vegetables from the oven, drizzle the reserved glaze over the salmon, and serve immediately.
Notes
For a gluten-free version, ensure the soy sauce is gluten-free tamari. Adjust the cooking time based on the thickness of the salmon fillets.
