6–8g matcha powder
18 ladyfingers
100g cream cheese or mascarpone
125g whipping cream
2 egg yolks
30g sugar
1 tsp matcha powder (for garnish)
Instructions
- In a mixing bowl, combine the mascarpone cheese with 3-4g of matcha powder.
- In another bowl, whip the cream until soft peaks form, then fold it gently into the matcha mixture.
- In a separate bowl, whisk the egg yolks with sugar until pale and creamy, then fold this into the matcha cream mix.
- Dissolve the remaining matcha powder in a small bowl with a bit of warm water, then quickly dip each ladyfinger in the mixture.
- Layer the dipped ladyfingers in a serving dish, followed by the matcha cream mixture. Repeat with additional layers.
- Chill in the refrigerator for at least 4 hours, preferably overnight, to set.
- Before serving, dust the top with a teaspoon of matcha powder for a beautiful finish.
