6 English muffins
6 large eggs
½ cup liquid egg whites
½ cup 2% cottage cheese
salt & pepper to taste
12 slices Sargento thin cheddar slices
12 slices Canadian bacon
6 tsp buttery spread
olive oil spray
Instructions
- Preheat your oven to 350°F (175°C) and prepare a muffin tin by spraying it lightly with olive oil.
- In a mixing bowl, whisk together the large eggs, liquid egg whites, cottage cheese, salt, and pepper until well combined.
- Pour the egg mixture evenly into the muffin tin, filling each cup about three-quarters full.
- Add a slice of Canadian bacon and a slice of cheddar cheese on top of each egg mixture.
- Bake in the preheated oven for 20-25 minutes, or until the egg has set and the tops are lightly golden.
- While the egg muffins are baking, slice the English muffins in half and spread 1 tsp of buttery spread on each half.
- Once the muffins are done, let them cool slightly then remove from the tin.
- Assemble the Egg McMuffins by placing an egg muffin between the two halves of an English muffin.
- Serve immediately or refrigerate for quick breakfasts throughout the week.
Notes
These muffins can be stored in the refrigerator for up to 5 days; simply reheat in the microwave for a quick breakfast option.
