2 tablespoons extra virgin olive oil
4 cups cherry or grape tomatoes
halved
4 cloves garlic

1/2 tablespoon dried oregano
1 cup green olives
pitted and chopped
4 tilapia fillets
1/3 cup crumbled feta cheese
Salt and freshly ground black pepper
to taste
Chopped fresh parsley
for garnish
Instructions
- Preheat your oven to 375°F (190°C).
- In a large skillet, heat 1 tablespoon of olive oil over medium heat. Add the halved tomatoes and cook until they start to soften, about 5 minutes.
- Stir in the chopped garlic and dried oregano, and cook for another 2 minutes until fragrant.
- Add the chopped olives and mix well. Season with salt and pepper to taste.
- Arrange the tilapia fillets in a baking dish and drizzle with the remaining olive oil, seasoning them with salt and pepper.
- Pour the tomato and olive mixture over the tilapia fillets, then sprinkle crumbled feta cheese on top.
- Bake in the preheated oven for 25-30 minutes, or until the fish flakes easily with a fork.
- Garnish with chopped fresh parsley before serving.
