Instructions
- In a large pot, heat the olive oil over medium heat. Add the chopped onion and sauté until translucent.
- Stir in the minced garlic, diced carrot, and diced celery. Cook for an additional 5 minutes until softened.
- Add the diced tomatoes, green chilies, cumin, chili powder, smoked paprika, cayenne pepper, and chicken broth. Bring to a boil.
- Reduce heat and stir in the shredded chicken, black beans, and corn. Simmer for 15-20 minutes, seasoning with salt and pepper to taste.
- For the tortilla strips, brush corn tortillas with olive oil, sprinkle with salt, cut into strips, and bake at 400°F for 8-10 minutes until crispy.
