Ingredients
1 cup plain yogurt
½ cup milk
½ cup mild flavored oil or melted butter
3 large eggs
2 teaspoons vanilla extract
2 cups all-purpose flour
½ cup light brown sugar
1 teaspoon baking soda
½ teaspoon salt
¼ cup rainbow sprinkles
Instructions
- Preheat your oven to 350°F (175°C) and line a mini muffin tin with liners.
- In a large mixing bowl, combine the plain yogurt, milk, oil or melted butter, eggs, and vanilla extract. Whisk until well blended.
- In another bowl, mix together the flour, brown sugar, baking soda, and salt.
- Gradually add the dry ingredients to the wet ingredients, stirring gently until just combined.
- Fold in the rainbow sprinkles until evenly distributed.
- Spoon the batter into the prepared mini muffin tin, filling each cup about 2/3 full.
- Bake for 15-20 minutes or until a toothpick inserted into the center comes out clean.
- Allow the muffins to cool in the tin for a few minutes before transferring them to a wire rack to cool completely.
Notes
For an added treat, try drizzling melted chocolate over the cooled muffins. Store in an airtight container to keep them fresh.
