Ingredients

½ teaspoon baking soda
¼ teaspoon salt
1 cup buttermilk
1 large egg
2 tablespoons melted butter
½ teaspoon vanilla extract
Cooking spray or additional melted butter for greasing the pan

Instructions
- In a large bowl, whisk together the flour, sugar, baking powder, baking soda, and salt.
- In another bowl, combine the buttermilk, egg, melted butter, and vanilla extract.
- Pour the wet ingredients into the dry ingredients and mix until just combined. Fold in any optional mix-ins like chocolate chips or blueberries.
- Heat a mini muffin pan and grease it with cooking spray or melted butter.
- Spoon the batter into each muffin cup, filling about 2/3 full.
- Bake in a preheated oven at 350°F (175°C) for about 10-12 minutes or until golden brown and a toothpick comes out clean.
- Let them cool for a few minutes before removing from the pan. Serve warm.
