Ingredients
Oreo cookies
Unsalted butter
Cold heavy whipping cream
Cream cheese
Unsweetened cocoa powder
Instant espresso powder
Powdered sugar
Vanilla extract
Semi-sweet chocolate chips
Light corn syrup
Instructions
- Crush the Oreo cookies into fine crumbs and mix with melted unsalted butter until evenly combined. Press the mixture into the bottom of a springform pan to form the crust.
- In a large bowl, whip the cold heavy whipping cream until soft peaks form. Set aside.
- In another bowl, beat the softened cream cheese until smooth. Gradually add in the unsweetened cocoa powder, instant espresso powder, powdered sugar, and vanilla extract until well combined.
- Gently fold the whipped cream into the cream cheese mixture until fully incorporated and fluffy.
- Pour the cheesecake mixture over the prepared crust and spread evenly. Refrigerate for at least 4 hours or until set.
- To make the ganache, melt semi-sweet chocolate chips with light corn syrup in a heatproof bowl over simmering water, stirring until smooth. Allow to cool slightly before pouring over the chilled cheesecake.
- Chill the cheesecake again until the ganache is set. Slice and serve chilled with additional cocoa powder or whipped cream if desired.
Notes
For best results, make sure all ingredients are at room temperature before mixing. Allow ample chilling time for the cheesecake to set properly.
