Ingredients
1 cup white rice (long grain or short grain)
4 cups whole milk (for extra creaminess)
1/2 cup granulated sugar
1/4 teaspoon salt

1 large egg
1/4 cup heavy cream
1/2 teaspoon ground cinnamon (optional

1/4 teaspoon ground nutmeg (optional

Instructions
- In a medium saucepan, combine the white rice and 2 cups of water. Bring to a boil, then reduce heat to low, cover, and simmer for 20 minutes until the rice is tender and the water is absorbed.
- In a large saucepan, combine the cooked rice, 4 cups of whole milk, 1/2 cup of granulated sugar, 1/4 teaspoon of salt, and 1/2 teaspoon of vanilla extract. Bring to a gentle simmer over medium heat.
- In a small bowl, whisk together the egg and heavy cream. Gradually add a couple of tablespoons of the hot rice mixture to the egg mixture to temper the egg, then stir this back into the pot.
- Continue to cook the pudding over low heat for about 10 minutes, stirring frequently until it thickens. Stir in the ground cinnamon and nutmeg if using.
- Remove from heat, and let the pudding cool slightly. Serve warm or chilled with optional garnishes like extra cinnamon, raisins, whipped cream, or toasted almonds.

For an extra creamy texture, stir in an additional splash of whole milk before serving. This pudding can be served warm or chilled, and can be made ahead of time. Adjust sweetness and spices to your preference.
