3 large eggs
1 cup vegetable oil
2 ¼ cups white sugar
3 teaspoons vanilla extract
2 cups shredded zucchini
1 cup chopped walnuts
Instructions
- Preheat your oven to 350°F (175°C) and grease two 9×5 inch loaf pans.
- In a large bowl, whisk together the flour, salt, baking powder, baking soda, and cinnamon.
- In another bowl, beat the eggs and mix in the vegetable oil, white sugar, and vanilla extract until well combined.
- Gradually add the dry ingredients to the wet mixture and stir until just combined.
- Fold in the shredded zucchini and chopped walnuts.
- Pour the batter evenly into the prepared loaf pans.
- Bake in the preheated oven for 30 to 40 minutes, or until a toothpick inserted into the center comes out clean.
- Let the bread cool in the pans for 10 minutes before transferring to a wire rack to cool completely.
