2 cups shredded zucchini

Instructions

  • Preheat your oven to 350°F (175°C) and grease two 9×5 inch loaf pans.

  • In another bowl, beat the eggs and mix in the vegetable oil, white sugar, and vanilla extract until well combined.

  • Pour the batter evenly into the prepared loaf pans.
