Ingredients
2 to 3 tablespoons butter
softened
2 to 3 tablespoons unsweetened cocoa powder
1 cup (170 g) chopped semisweet or bittersweet chocolate
10 tablespoons salted butter
pinch of salt
about 1/8 teaspoon
½ teaspoon vanilla extract
3 large eggs
3 large egg yolks
1 ½ cups (171 g) powdered sugar
½ cup (71 g) all-purpose flour
Instructions
- Preheat your oven to 425°F (220°C) and prepare 4 ramekins by greasing them with softened butter and dusting with cocoa powder.
- In a heatproof bowl, combine the chopped chocolate and salted butter. Melt the mixture over a double boiler or microwave in 30-second intervals until smooth.
- Remove the melted chocolate mixture from heat and stir in a pinch of salt and vanilla extract.
- In a separate bowl, whisk together the eggs, egg yolks, and powdered sugar until thick and pale.
- Gently fold the chocolate mixture into the egg mixture until combined.
- Sift in the all-purpose flour and gently fold until just incorporated.
- Divide the batter evenly among the prepared ramekins, filling each about 2/3 full.
- Bake for 12-14 minutes, or until the edges are firm but the center is still soft.
- Remove from the oven and let sit for 1 minute, then carefully invert each ramekin onto a plate.
- Serve immediately, garnished with ice cream or whipped cream, if desired.
