1 cup (170 g) chopped semisweet or bittersweet chocolate

10 tablespoons salted butter

pinch of salt

½ teaspoon vanilla extract

3 large eggs

3 large egg yolks

1 ½ cups (171 g) powdered sugar

½ cup (71 g) all-purpose flour


Instructions

  • Preheat your oven to 425°F (220°C) and prepare 4 ramekins by greasing them with softened butter and dusting with cocoa powder.
  • In a heatproof bowl, combine the chopped chocolate and salted butter. Melt the mixture over a double boiler or microwave in 30-second intervals until smooth.
  • Remove the melted chocolate mixture from heat and stir in a pinch of salt and vanilla extract.
  • In a separate bowl, whisk together the eggs, egg yolks, and powdered sugar until thick and pale.
  • Gently fold the chocolate mixture into the egg mixture until combined.
  • Sift in the all-purpose flour and gently fold until just incorporated.
  • Divide the batter evenly among the prepared ramekins, filling each about 2/3 full.
  • Bake for 12-14 minutes, or until the edges are firm but the center is still soft.
