These No Bake Mint Chocolate Bars are an easy, delicious treat that combines a rich chocolate base, a creamy mint filling, and a decadent ganache topping, perfect for satisfying your sweet tooth.


Ingredients

1/2 cup butter

1/3 cup cocoa

1/4 cup sugar

1 egg

2 cups graham cracker crumbs

3/4 cup shredded coconut

1/4 cup butter

2 cups powdered icing sugar

23 tablespoons milk

1 teaspoon mint extract

green food coloring

2/3 cup chocolate chips or chopped chocolate

2 tablespoons butter


Instructions

  • In a medium saucepan over low heat, melt 1/2 cup butter, cocoa, and 1/4 cup sugar. Stir in 1 egg until fully combined.
  • Remove from heat and mix in graham cracker crumbs and shredded coconut until well combined.
  • Press the mixture into the bottom of a greased 9×9 inch pan.
  • In a bowl, beat together 1/4 cup butter, powdered icing sugar, milk, mint extract, and a few drops of green food coloring until smooth and creamy.
  • Spread the mint filling over the chocolate base in the pan.
  • In a small saucepan, melt the chocolate chips and 2 tablespoons of butter together until smooth.
  • Pour the ganache over the mint filling and spread evenly.
  • Chill in the refrigerator for at least 30 minutes until set before slicing into bars.

Notes

For added flavor, consider adding crushed peppermint candies on top of the ganache before chilling.
